I’ve been a pretty flaky Delicious Dish Tuesday contributor lately, but thankfully my sweet friends at Coping With Frugality and Full Time Mama aren’t holding it against me! This week I bring you Cheesy Baked Pork Chops, inspired by my new journey with Revolt Fitness which you can read about here. This is a low cal, low fat and FULL flavored dish!
What you need:
~ One package pork chops (I prefer thinly sliced)
~ Parmesan Cheese (the kind in the shaker works great)
~ 1/2 C. fat free Greek yogurt
~ Salt/pepper
~ Non-stick cooking spray
What you do:
Step One: Rinse the pork chops and pat them dry
Step Two: Spread the Greek yogurt out on a plate and rub the each pork chop in it.
Step Three: Sprinkle the cheese onto a separate plate and dredge each pork chop in the cheese – both sides.
Step Four: Spray a baking sheet with non stick cooking spray and place the pork chops on it.
Step Five: Season each pork chop with salt/pepper
Step Six: Bake at 350 degrees until done (about 25 minutes for thin ones)
Step Seven: Turn on the broiler and broil the top side of the pork chops until the cheese just starts to darken
*Important* Even with broiling the coating will not become crispy, it’s more of a creamy, cheese coating. I’ll admit, it isn’t super appetizing to look at, but the taste is DIVINE.
Serve with wild rice and steamed asparagus.
Yum-O! This looks so good, and I happen to have some pork in my freezer right now. Will have to get greek yogurt, though I’ve been wanting a good excuse to get some anyway.
