Cilantro Jalapeno Lime Pesto {Recipe}


Cilantro: either you love it or you hate it. My husband loves it, here is HIS spin on the classic pesto recipe!



1 palmful of pine nuts (in case you were wondering, that’s about 1/3 cup)

1 jalapeno, seeded and roughly chopped

2 large cloves of garlic, peeled

1 bunch of cilantro, rinsed and stems removed

Approx. 20 large basil leaves

1 chunk of parmesan cheese (about the size of a golf ball, cut into smaller chunks)

Juice of 1/2 a lime

Salt/pepper to taste

Olive Oil

1 sprig fresh oregano, just the leaves (optional)


Here’s what you gotta do:

1. Throw everything except for the olive oil into the food processor (cheese, pine nuts and garlic towards the bottom)

2. Pulse the food processor about 10-15 times

3. Turn food processor on, drizzle oil into the top of it until pesto reaches desired consistency

So, now you have a bunch of fresh, spicy pesto, ready to eat! You can use it for pasta (add steak/tomatoes), on sandwiches, as a dip, etc. Yum yum!

PS – It will give you horrible breath.
