Oopsy, I have been out of the DDT loop for the past few weeks. Life has been CRAZY! I started the Revolt fitness plan a few weeks ago, and I am learning a lot about carbohydrates, sugar, fat and calories! I was inspired to create a tasty AND delicious lunch for hubby and I. We love creamy, rich things, by using Greek yogurt in this chicken salad I was able to accomplish a creamy dish (and the 1/2 C. of Greek yogurt is only 65 calories!).
What you need:
1 C. chicken breast – cooked and shredded (I cheated and used a rotisserie chicken)
1/2 C. plain, non fat Greek yogurt
fresh dill
salt
garlic powder
mixed greens/tomatoes
whole wheat pita bread
Step One:
Mix chicken, yogurt and add dill, salt and garlic powder to taste
Step Two:
Pile on top of a bed of mixed greens and top with tomato
Step Three:
Cut up half of a pita into triangles to enjoy with your salad

MmmYUM that salad looks amazing! Now I have a taste for tomatoes! I do have spinach already though… I need to make this today!

Oh my goodness, that looks delicious! I love chicken salad. I never think of shredding my left over chicken for something like this! I will from now on.

That looks amazing! I was recently introduced to Greek Yogurt and I was pleasantly surprised; maybe I need to start looking at using it in more of my recipes.
