Mango Salsa – Delicious Dish Tuesday

 

Earlier this week I needed to use up some leftover steak from a previous dinner and decided to make steak quesadillas. I had a few mangoes in the fridge from a produce coop that I also needed to use up, so I whipped up some mango salsa to jazz up the quesadillas! The beautiful thing about this recipe is that it is not exact, and each ingredient can be increased or decreased without ruining the salsa! Here is how I made it. Ingredients:

4 small tomatoes – seeds/juicy parts removed

2 cloves garlic – peeled

2 small shallots – peeled

2 small jalapenos – seed/ribs removed

Small handful of cilantro – stems removed/washed

Flesh of 2 small mangoes

Salt and pepper to taste

Give everything a quick chop and throw into the food processor. Pulse it until it reaches the desired consistency. That’s it! Yum :)
