We eat a lot of sandwiches around here in the summer, but I like to mix it up and serve the kiddos something different at least once a week. I was so surprised when they gobbled up this Turkey Noodle Soup for both lunch AND dinner!
What you need: (This is a kid-sized recipe and makes enough for 4 kid-sized bowls)
~ 1 1/2 – 2C. chicken stock
~ 1/2 C. cooked ground turkey
~ 1/2 C. small noodles
~ 1/4. C diced carrots
~ 1/4 C. frozen peas
What you do:
Step One: Boil the noodles as directed on package, add carrots for the last 7 minutes and peas for the last minute, drain.
Step Two: Heat chicken stock on medium-low while the noodles are boiling.
Step Three: Add noodles, veggies and turkey to chicken stock, mix and serve.
*We served this soup with bread and butter, or crackers*

We love soup when it’s cooler out. This might be great on a rainy summer day, though!
